Poitín

The True Spirit of Ireland, Poitín, Poteen or Potcheen. Since 2008 It is protected by a G.I. and since 2015 it has also had a Technical File that dictates the criteria that allows it to be called Irish Poitín, it can only be made from cereals, grain, whey, sugar beet, molasses and potatoes.
It was traditionally distilled in a small pot still and the term is a diminutive of the Irish word pota, meaning "pot". The Irish word for a hangover is póit.
Making a resurgence in recent times it is used now in cocktails and as a neat spirit far from its origins as an Illegal Spirit
